Ahh the Super Bowl. The one day a year it feels socially acceptable to veg out on the couch for hours at a time and eat ALL THE FOOD. To be honest, I really just watch it for the commercials, but I can’t be the only one right?!
To avoid feeling like a total couch potato, I whipped up this super simple and wholesome recipe my dad and I created over winter break! It’s a twist on a classic football snack, Texas Caviar, with added avocado and feta cheese. It might seem strange to add feta to a recipe like this, but my dad and I swear by it whenever we make guacamole, so we knew it would be a perfect addition to this recipe!
Unlike a lot of chip dips that leave you feeling like you just consumed 6 pounds of greasy cheese (no offense spinach artichoke and buffalo chicken dips, I still love you), this recipe is light and STILL packed with flavor! Plus, you’ll feel good getting in a serving of veggies alongside your chicken wings 🙂
What you’ll need:
3 Roma tomatoes
1 medium white onion
1 15-oz can black beans (I like Eden Organic – no added salt!)
1 15-oz can corn
2 diced avocados
½ cup crumbled feta cheese
¼ cup fresh cilantro, coarsely chopped
2 tbsp apple cider vinegar
2 tbsp lemon juice
2 cloves minced garlic
Salt and pepper to taste
Optional: ¼ cup chopped jalapeno (I’m a wimp so I gladly omitted, but feel free to add)
But what now?
- Dice the tomatoes and onion and mix in a large bowl with the beans and corn. Add the jalapeno here if you want a little kick!
- Add the diced avocado, feta, and cilantro and gently mix. (Tip: make the avocado cubes large enough that they’ll keep their shape rather than mashing when you mix them in)
- In a small bowl, whisk together the apple cider vinegar, lemon juice, minced garlic, salt, and pepper. Pour this dressing over the mixture in the large bowl and stir with a large spoon.
- Garnish with extra cilantro and feta if you want and serve with tortilla chips!
It’s only a few hours until kickoff, but you can really grab any ingredients you need from the store and make this salsa/caviar in under an hour. Made with wholesome veggies and real ingredients (no spice packets loaded with sodium and MSG), this is a game day snack you can feel good about enjoying. My favorite tortilla chips to serve it with are Food Should Taste Good multigrain chips and Tostito’s Multigrain Scoops that let you pile in tons of chunky goodness in every bite.
