Super Bowl Sunday Avocado Caviar

To be honest, I was basically oblivious to the fact that the Super Bowl was this weekend until about three days ago – oops! But, it was just enough time for me to recall this great dip recipe I created with my dad over winter break that would be perfect for game time. It’s a twist on the classic football favorite, Texas caviar, with added avocado and feta cheese. You can whip up this super simple recipe in just ten minutes with some basic groceries. And since it requires no cooking, you can even make it in your dorm room!

What you’ll need:

3 avocados

2 Roma tomatoes

1 medium white onion

1 15-oz can black beans (I like Eden Organics – no added salt!)

1 15-oz can corn

¼ cup fresh cilantro, coarsely chopped

2 tbsp apple cider vinegar

2 tbsp lemon juice

¼ tsp garlic powder (or mince 2 cloves if you have fresh ones)

Salt and pepper to taste

½ cup feta cheese

Optional: ¼ cup chopped jalapeno

Now what?

  1. Dice the avocados, tomatoes, and onion and gently mix in a medium-sized bowl with the beans, corn, and cilantro. Add jalapeno here if you want a little kick! (This girl can barely handle barbecue sauce, so consider this a recommendation based on intuition rather than trial.) Tip: Make the avocado cubes about ½-1 inch on each side so they don’t get mashed during mixing.
  1. In a small bowl, whisk together the apple cider vinegar, lemon juice, garlic powder or minced garlic, salt, and pepper. Pour this dressing over the mixture in the medium-sized bowl and stir with a large spoon.
  2. Top off the salsa with feta and gently stir to combine.
  3. Garnish with extra cilantro if you want and serve with tortilla chips!

It’s only a few hours until kickoff, but you can really grab any ingredients you need from the store and make this salsa in under an hour. Made with wholesome veggies and real ingredients (no spice packets loaded with sodium and MSG), this is a game day snack you can feel good about enjoying. My favorite tortilla chips to serve it with are Food Should Taste Good multigrain chips and Tostito’s Multigrain Scoops that let you pile in tons of chunky goodness in every bite.
